USING THE MULTIFUNCTION OVEN
ACM 392 – ACM 398 – ACM 377
Fan convection system
The air is drawn in through openings on the rear panel
of the oven and then heated before being returned to
the oven chamber.
The convection function assures uniform heat
distribution in the oven and permits simultaneous
cooking of food on any of the three oven levels.
Temperature for convection cooking are lower than
those for conventional radiant heat cooking (see
“Temperature selection”).
Upper and lower heating elements
Inside the oven the heating elements are located on
the oven floor and ceiling. Heat is supplied by radiation.
Grill
The grill is secured to the rear wall of the oven on a
hinge system that allows it to be lowered to allow
proper access when cleaning the oven ceiling.
Side racks

The oven is equipped with two removable side
supports which form 4 guides for the insertion of the
drip tray, baking trays and grids. The grid, baking trays,
and drip tray must be inserted between the pairs of
steel bars located at the same height on each side. This
system prevents the containers from tipping when they
are extracted from the oven chamber. Recommended
grid/baking tray levels are shown in the tables at the
end of this handbook.
Removing the side racks improves access to the oven
ceiling for cleaning (after the grill heating element has
been lowered).
